Submissions Requested

Umm...I KNOW I'm not the only one who has experimented in the office kitchenette. Let's hear from the rest of you.

The challenge is for each of you to add at least 1 creative lunch/breakfast idea.
You could even tell on someone else. Hey, it's the internet. All's fair in love and cyberspace.

When life gives you apples...

At YES, Service Saturday (formerly known as Saturday School) is a monthly event where students flock to campus devoted to the purpose of serving their community... or because we make them.

Unbeknownst to the students, the spoils of their rejected Service Saturday bag lunches often go to "serve" the staff. Thus the overflowing basket of small, over-ripe apples in the teacher's lounge.

Determined to make good use of them (because simply eating them would be lame), I decided to see what could be done with apples...and a microwave.

Apple Surprise!
(single serving)

1-2 small apples
1/2 cup of water
2 tablespoons of sugar
1 packet of honey (opt.)
1 packet of instant oatmeal
flavored coffee creamer (of course!)

Cut apples into wedges. (Remove skin if you do NOT have a meeting for which you are already late). Put apples, sugar, water and honey in a microwaveable bowl. Cook for 3 1/2 minutes. Carefully pour off the water, add instant oatmeal, then pour water back in. I find this makes it easier to mix, although I'm fairly sure you could have just left the water in.
Microwave for 30 seconds. Add creamer.

If you happen to have ice cream left over from an ice cream party, omit the whole oatmeal thing and just pour the cooked apples over ice cream, then drizzle with dulce-de-leche syrup...or leftover syrup packets from Jack-in-the-Box.

Rush Hour

Rushing off to work in the morning, I fumble around in the cabinet for something...anything...I can eat for breakfast. My fingers land on a package of instant oatmeal. Peaches and cream. Perfect.
I snatch up my purse, keys, (check for my cell phone), laptop bag (check the cat's bowl for food). Out the door.

Only as I'm backing out of the garage into the driveway do I notice that my 6 year-old is not the in car. I knew I was forgetting something. It looks like it's gonna be that kinda day. Thank God I have 1st period off.

Creamer-y Oatmeal

  • 1 packet of instant oatmeal
  • 1 cup of water
  • 2 tablespoons (1 pump, 1 carry-out cup, or count-to-2 pour) flavored coffee creamer

Cook oatmeal as directed (in microwave). Jazz up your oatmeal with a little flavored coffee creamer. *French Vanilla is great. Straight from your office fridge, it cools off your oatmeal just enough for you to scarf it down before your first meeting. Surprisingly, it doesn't make it too sweet.
